The Chili Bourbon, also commonly referred to as Ají Bourbon, is a highly distinctive and exclusive cultivar. This variety is generally understood to be a natural mutation of Bourbon. Its origin and discovery are widely localized to the department of Huila, Colombia, with its initial emergence often traced to the municipality of San Adolfo.
Ají Bourbon is cultivated as an exotic selection on only a few farms. The trees are known for their low yield, resulting in the coffee being produced in limited, exclusive volumes. The variety's name is derived from a remarkable aromatic characteristic: the ripe coffee cherries possess a potent and unusual fragrance distinctly reminiscent of chili peppers or ají.
