Producer & Origin
El Jaragual is a family-operated farm in Amalfi, Antioquia, Colombia, overseen by Jorge Mira, a forestry engineer whose work combines coffee cultivation with sustainable forestry practices. Spanning around 150 hectares, the farm integrates pine plantations and preserved native forest alongside shaded coffee production, creating a diverse agroforestry environment.
The project is a collaboration between Jorge Mira and Jonny Sanchez, focusing on careful processing and high-quality lots designed for specialty roasting.
Sourcing
We sourced this coffee through Mi Cafe, a partner whose work focuses on connecting independent roasters with progressive Colombian producers exploring new processing approaches while maintaining transparency and quality.
Processing Context
The washed thermal shock yeast inoculation process helps guide fermentation more carefully using natural methods.
Unlike infused or co-fermented coffees, nothing foreign is added — the goal is simply to guide fermentation more precisely while preserving the integrity of the coffee itself.
Practical Notes
Designed primarily for filter brewing, highlighting vibrant fruit character and layered sweetness. It can also be enjoyed as a lighter, adventurous espresso for those who enjoy exploring new flavour profiles.
Depending on brew method and dose, a 250g bag may produce around 12–16 cups.
