This coffee comes from Edinson Argote at Quebraditas in Colombia, a producer known for combining careful agronomy with innovative post-harvest techniques. Sourcing
We sourced this coffee through Mi Cafe, a partner whose work focuses on connecting independent roasters with progressive Colombian producers exploring new processing approaches while maintaining transparency and quality.

Processing Context
The washed thermal shock yeast inoculation process helps guide fermentation more carefully using natural methods.
Unlike infused or co-fermented coffees, nothing foreign is added — the goal is simply to guide fermentation more precisely while preserving the integrity of the coffee itself.

Practical Notes
