This was the first coffee we roasted on our Roest P3000, and it felt like the right place to begin — familiar, reliable and quietly expressive. We kept the approach simple, aiming for a smooth and comforting espresso while still keeping enough clarity for filter brewing.

Producer & Origin
This coffee comes from Hunchouen, a collective of over 550 small producers in the Tajumuco region of Huehuetenango, Guatemala.
Farms here sit at high elevation, where traditional varieties and careful washed processing often produce coffees with a calm sweetness and a clean finish.

Sourcing
We sourced this coffee through Caribbean Goods, a partner whose work focuses on transparent relationships with Guatemalan producers and bringing thoughtfully sourced coffees to independent roasters.

Practical Notes
Built around a smooth and comforting espresso profile, where the sweetness and texture feel most at home. It can still be enjoyed as filter if you prefer a softer, more rounded cup.
Depending on brew method and dose, a 250g bag may produce around 12–16 cups.
